This is one of those activities that feels like a magic trick. Simple ingredients, a zip-lock bag, some shaking, and suddenly: ice cream. Kids love the science, everyone loves the result.

What You Need

  • 1 cup half-and-half or heavy cream
  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla extract
  • 3 cups ice
  • 1/3 cup rock salt or kosher salt
  • 1 quart-size zip-lock bag
  • 1 gallon-size zip-lock bag
  • Towel or gloves
  • Toppings: sprinkles, chocolate chips, fruit

How To Do It

  1. Mix the cream base — pour cream, sugar, vanilla into the small bag. Squeeze out air, seal tight.
  2. Build the ice bath — fill the big bag halfway with ice, add rock salt
  3. Bag in a bag — place the sealed cream bag inside the ice bag, seal it
  4. Shake it — shake and massage for 8-10 minutes. Wrap in a towel. Put on music!
  5. Check it — should be firm like soft-serve. Need more time? Shake 2-3 more minutes.
  6. Rinse and eat — rinse salt water off the small bag, snip a corner, squeeze into bowl, add toppings

Best time: Afternoon on a hot day — you'll want the cold treat.

Seasonal tip: Try seasonal mix-ins: strawberries in June, peaches in July, blueberries in August.

Good to know: Rock salt is in the hardware/ice-melt aisle, not cooking. Kosher salt works too.

Safety Note: Outer bag gets extremely cold — always use a towel or gloves. Rock salt is not edible. Supervise young kids to avoid bag-popping.
